Shannon and I always have a coffee on the menu to serve as the perfect cup with breakfast. We brew it a little weaker (1:18+) and call it "Watery Black." This coffee serves this purpose. Notes of toffee (coffee's candy cousin) and semi-sweet chocolate make the perfect pairing with any breakfast food with a little citrus acidity to cut through the fats and keep things interesting.

Origin & Process
All the coffees in this regional blend are sourced from small, family-owned farms in Pitalito, located in the Huila region of Colombia. It is the second most populous municipality in the department. Known for its humid climate and steady temperatures—typically between 18–21ºC—this area provides ideal growing conditions for Colombian Supremo green coffee beans. Cooler months from May to July can see temperatures dip to 12–14ºC, adding seasonal variation that contributes to complex cup profiles.
